  • 1 whole fresh fish (about 1-½ pounds)
  • ½ teaspoon salt

Method

  1. Rub the fish with ½ teaspoon salt, ½ tablespoon wine, smashed green onion and ginger, and marinate for about 20 minutes.
  2. Deep-fry the fish in warm oil over low heat for about 1 minute. Remove from oil, drain dry.
  3. Put ½ cup rice, ½ cup black tea leaves, and ½ cup brown sugar into an old wok. Place yellow fish on grill, cover tightly. Heat the wok over
