Pears and chocolate go very well together; the combination inspired the famous Pears Belle Hélène with its vanilla ice cream, poached pears and chocolate sauce. These pears are stuffed with a chocolate mousse and served cold with hot chocolate sauce.
Using a saucepan large enough for the pears, bring the water, sugar, rind and lemon juice to a boil. Meanwhile, peel the pears but do not remove the stalks. Rub the peeled pears with the half lemon and place the pears in the saucepan. Simmer, covered, for 10-15 minutes, or until the pears are just tender.
