Ingredients

  • 600 ml (1 pint) milk
  • 1 vanilla pod, split lengthways

Method

Bring the milk and vanilla pod to just below boiling point, cover and leave to infuse for 15 minutes. Scrape some of the black seeds from the pod into the milk. Wash and dry the pod and store with caster sugar to make vanilla sugar. Whisk the egg yolks and sugar together until pale and thick. Whisk in the milk, and then return the mixture to the saucepan.
