Use blood oranges when they are in season and you will have a beautiful red sorbet flecked with orange kumquats. Serve it piled high in a chocolate box or cup and I promise it will become one of yourfavourite desserts.
Rub the sugar cubes all over the orange skins until they become pale yellow. Wash and cut the kumquats in quarters, lengthways. Remove any pips. Place them in a small saucepan with the sugar cubes, granulated sugar and water. Simmer very gently for about 25 minutes, until the kumquats are tender. Remove the saucepan from the heat and set aside.
