This is a lovely creamy ice cream, smooth and chocolaty without being overwhelmingly rich. For an extra treat you can turn it into Praline Ice Cream.

Melt the chocolate in the top of a double saucepan and set aside. Bring the milk to just below boiling point. Whisk the egg yolks with the sugar in a bowl until thick and light and then whisk in the hot milk.
