Almost everyone loves meringues and these are particularly nice with their dark chocolate edge and coffee cream filling. The mixture can also be spooned, rather than piped, into mounds and baked.

Oven temperature Gas Mark ½/130°C/250°F

Preheat the oven and line two baking sheets with baking parchment. If you like, cut an oval shape out of a card about 3.5 cm (
