A chocolate artichoke is certain to provide a talking point and is an amusing finale for a special dinner. The leaves can be pulled off and eaten as after-dinner mints. It looks very difficult to make but is surprisingly easy and fun to do.
Melt the chocolate in the top of a double saucepan. Stir in the sunflower or groundnut oil and the peppermint oil. Do not use cake covering as it is unsuitable. Allow the chocolate to drop to blood temperature before dipping. Peel the leaves off the artichoke, discarding any dirty or damaged ones, and dip the outside of the leaves in the chocolate. Shake any
