Cocoa Glaze

• 100 ml/3½ fl oz water
• 100 g/3½

Boil the water and sugar together. Take off heat and add cocoa powder. Boil again and reduce to a simmer for 5 minutes. Strain and use.

You can use this glaze to decorate a cake and it will keep its gloss.
