Take the most fragrant rose petals you can find - make sure that they have not been doused in chemicals or pesticides. Ensure that they are dry so don’t gather them after a rain storm or first thing in the morning when they will be covered in dew.
Using a pastry brush and an egg white (not whisked) carefully paint both sides and then shower with caster sugar making sure they are well covered. Now leave them to dry on a tray covered in foil. They are better if left overnight but if you haven’t got that amount of time then at least 3 hours. They will be gloriously crunchy and still smell of roses. They will last for months if kept in an ai
