Fabulous with vanilla or white chocolate ice cream.
Combine all the ingredients (except the vanilla) in a heavy saucepan and over a low heat stir until the sugar has dissolved. Turn up the heat and as soon as the sauce begins to boil, lower the heat and continue to boil gently for 10 minutes. Remove from the heat and stir in the vanilla. Keeps for several days in the fridge. Re-heat before use.
