The difference between a sauce and a coulis or purée is that a sauce is creamier as mostly they are made with butter or cream. A coulis is a lighter, purer fruit purée preferably made with a single fruit with a moderate proportion of sugar which should be to sweeten and not to overpower.

Many fruits work terrifically well with chocolate, especially blackcurrant, blackberry, raspberry, strawberry and orange. The sugars and acids in the fruits balance the bitter sweetness of the choco
