Pistachios are a natural partner for chocolate - both dark and white.
Bring the milk to the boil with the pistachio nuts. Meanwhile, whisk the egg yolks and the sugar together until creamy - about 2 minutes.
Pour the boiling milk over the egg yolks and sugar and whisk to amalgamate.
Transfer back to a saucepan and over a very very low heat, simmer until the consistency coats the back of the spoon - about 7 minutes. Do not let boil or the mixture w
