These make a lovely contrasting accompaniment to many of the chocolate puddings in this book.

Ingredients

  • 55 g/2 oz caster sugar

Method

Preheat oven to 180°C/350°F/gas 4 and line a baking sheet with silicon paper.

Whisk the egg white with a pinch of salt for a couple of minutes until you have a soft peak. Whisk in the caster sugar. Fold in the ground almonds and the almond essence.
