Ingredients: 125 ml/4½ fl oz whipping or double cream, room temperature; 100 g/3½ oz hazelnuts, toasted and skinned (or almonds, pecans or pistachios); 4 tbsp rosewater; 100 g/3½ oz caster sugar; 115 g/4 oz caster sugar; 30 g/1 oz plain flour; 30 g/1 oz cornflour; 55 g/1 oz ground almonds; 4 eggs; 250 g/8½ oz white chocolate, melted to no more than 38°C; 55 g/1 oz unsalted butter, melted; ½ tsp vanilla essence

Charlie is the son of a great friend of mine and he adores white chocolate, and has asked me several times over the years for a recipe. The book concentrated my mind and we came up with this. It looks spectacular decorated with a rose - but this is purely optional and makes little difference to the taste. If you don’t like roses then leave out the rosewater.
