A delightful variation on puff pastry mille-feuille.
Sift the flour with a pinch of salt. Add the ice water and mix with a fork to a doughy consistency. Turn on to a work surface and knead thoroughly for four or five minutes until smooth - almost like you would bread. Wrap in polythene or a cloth and leave in the refrigerator for 30 minutes to rest.
