Along with Michel Roux’s recipes for Roule this is definitely the best roulade recipe I have tried. It is also the hardest to manage but is worth the effort. You can also use this roulade as a base for other desserts.

Grease a baking sheet 30 cm x 38 cm (12 in x 15
