Ingredients: 85 g/3 oz milk chocolate, chopped into pieces the size of ½ a walnut; 225 g/8 oz plain flour and 1 tsp chilli powder and 30 g/1 oz cocoa powder, sifted together; 3 tbsp water; 175 g/6 oz caster sugar; 2 eggs, lightly beaten; 55 g/2 oz unsalted butter; 150 g/5½ oz unsalted butter; 115 g/4 oz plain chocolate, chopped; 3 tbsp rum; 55 g/2 oz finely chopped stem ginger
