This is a simple, almost fool-proof, soufflé which generally has a more than agreeable effect on the guests. You can make it in advance and freeze it. If you do this you must give it at least another 10-15 minutes. A treat is to add 8 crushed cardamom seeds to the basic roux.

Method

Butter a litre/ pint ceramic soufflé dish and ‘run out’ with the extra 2 tablespoons of the sugar.
