This flaming ice cream creates a spectacular effect and it is relatively easy to make; it is great instead of Christmas pudding. From the delightful Ernst Bachmann (see Directory).
Whisk together the yolks and sugar until pale.
Bring the milk, vanilla pod and salt to the boil. Pour over the yolk and sugar mixture and mix thoroughly. Add half the grated chocolate, the cocoa powder and the cream. Stir until well combined. Strain through a fine sieve, pour in a suitable container and place in the freezer for 1-2 hours or until beginning to freeze but not yet solid. R
