Brian Turner of Turner’s. This recipe is a divine, airy chocolate mousse with fresh blackcurrants and cassis. I had this once for supper in Turner’s as part of their exceptional set menus. The balance of the meal was immensely satisfying but I would go there just for this one alone! I have tried it with raspberries and blackberries and also tried it with homemade jam instead of making a purée - and it works.
