Here’s one from the irrepressible Herbert Berger, Head Chef of I Lombard Street, in the City of London. Makes a tart with deliciously light pastry. Oranges go really well with chocolate. The orange filling needs to rest for 24 hours, so start this the day before you want to serve it.
