Here’s one from the irrepressible Herbert Berger, Head Chef of I Lombard Street, in the City of London. Makes a tart with deliciously light pastry. Oranges go really well with chocolate. The orange filling needs to rest for 24 hours, so start this the day before you want to serve it.
Whisk together by hand the orange juice, orange zest, eggs and cocoa powder Whisk in the cream. Pour into a glass bowl in the fridge and allow to stand for 24 hours.
