  • 200 ml/7 fl oz whipping cream
  • 225 g/8

Method

Boil the cream and pour over the chopped chocolate. Stir until all the chocolate has melted

Stir in the rum. Allow to cool and follow basic truffle instructions.

You can cover these in either dark or milk couverture. I prefer the contrast of milk and bittersweet. These work well with cocoa powder.
