Dried cherries, finely chopped 120 g 4 oz
Toasted Almond Marzipan (Variation) 1x formula 1x formula
Dark chocolate, melted, tempered, for precoating and securing almond halves as needed
Almonds, toasted, halved 110 halves 110 halves
Dark chocolate, melted, tempered, thinned, for dipping (see Note) as needed


  1. Mix the dried cherries into the marzipan.
  2. Roll the marzipan into a rectangle approximately 18 × 30 cm/7 × 12 in, 1 cm/ in thick.
  3. Precoat one side of the slab with the tempered dark chocolate.
  4. Using a 30-mm/1-in round cutter, cut slender crescent moons out of the marzipan.
  5. Garnish each piece with half a toasted almond, secured with a dot of the tempered dark chocolate.
  6. Dip the pieces in the thinned dark chocolate.
