Lay out the berries on a baking tray and open-freeze them for 2 to 3 hours. Alternatively, you can use the ready-frozen mixed berries available from most supermarkets.
Put the chocolate in a large heatproof bowl.
Put cream in a saucepan and heat it very gently until it boils. Remove the pan from the heat and, when the cream has subsided, pour a small amount over the chocolate. Stir well until thoroughly mixed, then add the remaining cream, a little at a time, mixing thoroughly after each addition.
Pour the mixture back into the pan and heat very gently until it just reaches simmering point—under no circumstances must it boil. Remove the pan from the heat.
Scatter the frozen berries on 8 individual plates and pour the hot white chocolate sauce over them. Alternatively, serve the sauce separately for your guests to pour themselves. Serve immediately.
