You can’t beat handmade chocolate truffles. They are one of heaven’s gifts and should be savored as one of the wonders of the modern chocolate world.


  • 8 oz. best quality dark chocolate (at least 70 percent cocoa solids), chopped into tiny, even-sized pieces about the size of a coffee bean (


Put the chocolate in a large heatproof bowl. Put the cream in a saucepan and bring to a bubbling boil. Remove from the heat and let it subside for 1 to 2 minutes, then pour it over the chocolate. Stir well with a wooden spoon until the chocolate is melted and smooth.
