Method

This excellent and typical salad consists of sliced boiled or steamed potatoes, mixed with a plentiful amount of shelled prawns, and garnished with slices of hard-boiled eggs. The dressing is made with 4 tablespoons of oil to 2 of vinegar, 1 teaspoon of salt, ½ a teaspoon of pepper, all well mixed, and poured over the potatoes while still warm. The dish is garnished with small chilli peppers.
