When I was young barrister, the Croydon Crown Court served disgusting over-boiled cabbage and all things nasty, but amidst all of this was a most perfect jam roly-poly. This is pure comfort food and should be eaten with lashings of custard.

Ingredients

  • 275 g sweet suet pastry
  • 225 g jam
  • grated rind of 1

Method

To make the pastry, mix all the dry ingredients together to form a stiff dough, adding the milk, as required.

Roll out the pastry to a strip 25cm long and 5mm thick. Spread with the jam, leaving a 1cm strip clear all round. Sprinkle with the grated lemon rind. Roll up, sealing the edges well with milk.
