  • In Turkey this salad is made with thick, meaty lamb’s lettuce leaves, but it also works well with smaller thin leaves. Gather together enough small heads of lamb’s lettuce to fill your salad bowl and toss them in a little olive oil and lemon juice, seasoned with salt and freshly ground black pepper. Mix 2-3 tablespoons of thick yogurt with 2 cloves of crushed garlic, and add to the bowl. Toss well and serve.
