Gypsy Salad

Çingene pilavı

Literally translated as ‘gypsy pilaf’, this salad combines raw vegetables with grated beyaz peynir instead of rice.

Ingredients

  • 2 red onions, roughly sliced
  • 6 oz/175 g beyaz peynir or feta cheese, grated
  • 2 long green peppers or 1 bell pepper, roughly sliced
  • 2 tomatoes, skinned and roughly chopped
  • 2-3 cloves garlic, roughly chopped
  • 1 green chilli pepper, roughly chopped
  • small bunch of parsley, roughly chopped
  • 1 scant teaspoon kırmızı biber
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper

Method

  • Sprinkle the onions with a little salt to draw out the juices. Add the grated cheese and mix well. Add the other ingredients and toss in the olive oil. Season to taste.
