A piquant salad from Mersin and Antalya on the Mediterranean. As is so often the case with food from warm regions, this refreshing salad is delicious when the sun-ripened oranges are sweet and juicy and the strong red onions are subtly nippy.


  • 3 oranges, peeled and sliced, pith removed
  • 2 red onions, finely sliced
  • 3 cloves garlic, finely sliced
  • 3 tablespoons black olives, stoned
  • handful of fresh mint and oregano leaves, chopped

For the dressing


  • Arrange the orange, onion and garlic slices on a plate or in a bowl, with the olives and fresh herbs. Mix together the ingredients for the dressing, add salt to taste, and pour over the salad. Toss well and serve.
