Mash the cheese with a fork and put it in a shallow pan. Stir it over a low heat until it melts into a soft, smooth paste.
In another shallow pan, stir the flour over a high heat until it turns a definite beige colour. Beat the flour and the sugar into the cheese and stir constantly, over a medium heat, until the mixture fluffs up and clumps. It is ready when it lifts off the bottom of the pan in one piece.
Sprinkle with icing sugar and serve warm or at room temperature.
