This simple village helva is soft, soothing and delicious. It is made with unsalted soft cheese, for which ricotta could be substituted.


  • 8 oz/225 g lor or köy peyniri
  • 1 tablespoon plain flour
  • 4 oz/120 g sugar
  • 1 tablespoon icing sugar


  • Mash the cheese with a fork and put it in a shallow pan. Stir it over a low heat until it melts into a soft, smooth paste.
  • In another shallow pan, stir the flour over a high heat until it turns a definite beige colour. Beat the flour and the sugar into the cheese and stir constantly, over a medium heat, until the mixture fluffs up and clumps. It is ready when it lifts off the bottom of the pan in one piece.
  • Sprinkle with icing sugar and serve warm or at room temperature.
