This is a popular winter jam from Bursa.


  • 1 lb/450 g dried figs, chopped roughly
  • 1 lb/450 g sugar
  • 1 pint/600 ml water
  • juice of 1 lemon
  • 2 tablespoons pine nuts


  • Put the sugar and water in a pan and bring to the boil. Reduce the heat, stir in the figs and lemon juice, and simmer until the figs are tender and the syrup thickens. Stir in the pine nuts and continue to simmer for 5 minutes. Let it cool in the pan, then spoon into scalded jars.
