Cool, refreshing and healthy, ayran can be made in seconds at home and is also sold in botties and cartons. Along with şalgam, a drink made from turnip juice, it is popular as an accompaniment to fast food and kebabs. It can be served with ice and sprinkled with mint.

Ingredients

  • 1 pint/600 ml cold thick yogurt
  • 1 pint/600

Method

  • Beat the yogurt in a bowl until smooth. Add the water and continue to beat vigorously until well blended. Season it with salt to taste, and keep it chilled if you are not drinking it immediately. Pour the ayran into a jug or tall glasses and, if you wish, sprinkle a little mint over the top.
