Becoming increasingly fashionable are the aromatic infusions of rose petals, camomile, lemon, orange blossom, mint, rosemary, ash blossom and wild sage. One of the most common is apple tea, which can be instantly prepared from processed granules, but it is healthier and more refreshing if it is made from apple slices baked in the oven and dried.


For a strong brew

  • 3 oz/90 g dried apple, sliced or flaked
  • 1 small piece of cinnamon bark
  • 2-3 cloves
  • a few dried rose petals (optional)
  • 1 pint/600 ml cold water
  • honey or sugar


  • Put the apple, rose petals and spices in a pan with the water, and bring to the boil. Reduce the heat and simmer for 15-20 minutes. Sweeten to taste with honey or sugar, and strain into tea glasses.
