Great-tasting baba ghannouj has a subtle smoky flavor with just the right balance of lemon, tahini, and garlic. Offer it as part of a mezza (appetizer), on a dinner buffet, or take it along to a barbecue. The buttery flavor of the roasted “meaty” flesh of the eggplant complements most meals. You can prepare the dip up to 3 days in advance. Refrigerate covered until needed. The smoked eggplant can be prepared and frozen in a freezer bag for several weeks. Thaw and drain. Prepare the dip as directed.
