  • 1 quart plain yogurt (regular, reduced-fat, or fat-free)
  • ½ teaspoon salt
  • 1 tablespoon freshly squeezed lemon juice, strained

    The yogurt cheese can be prepared days in advance. It can be stored in an airtight container in the refrigerator for several weeks. You can buy yogurt cheese (called labni, or sometimes spelled lebni) at specialty markets.
