Grilled vegetables are always a great addition at a barbecue or as a side dish with the main meal. The colors are vibrant, and the individual flavors are delicious. They are easy to prepare and complement many meals. Mix and match seasonal vegetables as you like.

Ingredients

For the Vegetables

  • ½ pound peeled carrots, cut into 1 × 1-inch pieces (about 15 pieces)
  • ½ pound green zucchini, cut into 1 × 1-inch pieces (about 15 pieces)
  • ½ pound yellow squash, cut into 1 × 1-inch pieces (about 15 pieces)
  • ½ pound red bell pepper, cut into 1 × 1-inch squares (about 24 pieces)
  • 2 tablespoons finely chopped fresh thyme or 1 teaspoon dry thyme
  • 2 tablespoons extra-virgin olive oil
  • 4 small onions, each cut into 4 wedges

    Method

    Prepare Ahead

    The vegetable skewers can be refrigerated for several hours prior to grilling. Grill the same day, as directed.
