This easy-to-make dish is a delicious way to offer green beans. Since it is served at room temperature, it is a great choice for outdoor parties, or as an afternoon snack with warm pita bread.


For the Beans

  • 2 tablespoons and 1 tablespoon extra-virgin olive oil, divided
  • 2 cups diced yellow onion (¼ inch)
  • cup cloves of garlic (cut in half lengthwise)
  • teaspoons salt
  • 1 pound fresh green beans (cut into 1-inch lengths)
  • ¼ teaspoon coarsely ground black pepper
  • ¼ teaspoon sugar
  • 3 cups boiling water
  • ½ cup tomato paste
  • 1 cup peeled and diced tomato (1 inch)
  • (You can substitute frozen cut green beans for fresh; they can be added without thawing.)


    Prepare Ahead

    You can prepare this dish up to 3 days in advance. Refrigerate covered. The flavors continue to develop as it marinates. Serve as directed.
