Lentils are wonderful disc-shaped pulses that have a mild earthy flavor and are high in fiber and protein. The caramelized onions enhance the rich texture and color of the pureed lentils. This dish is served at room temperature, making it ideal for picnics, an afternoon snack with warm pita bread, or even at the office for lunch.


For the Lentils

  • 8 ounces brown lentils (about cups)
  • 1 teaspoon and ¾ teaspoon salt, divided
  • ¼ cup basmati rice
  • cup and 1 tablespoon extra-virgin olive oil, divided
  • 3 cups diced yellow onion (¼ inch)

    You can prepare this dish up to 3 days in advance. Refrigerate. Serve as directed.
