This is a great way to convert the Spinach with Caramelized Onions recipe into a meal of its own. It is a simple combination of two recipes. Once you have prepared the spinach with caramelized onions you arrange warm kibbi meat filling over the spinach; then top the meat filling with the caramelized onions and toasted pine nuts. The combination of flavors is divine and all of it can be prepared in advance and assembled just before serving.

    To Prepare the Sautéed Spinach with Lamb Topping

    Prepare the caramelized onions and sautéed spinach.

    For the topping, toast the pine nuts and prepare the lamb filling (you can substitute ground beef or ground chicken for the lamb). Reserve the toasted pine nuts to sprinkle over the top of the dish.
