This recipe isn’t a traditional dish and doesn’t really find its roots anywhere; in fact it’s a mishmash – a Japanese-style batter, an Indian mayonnaise and soft-shell crab, which is found everywhere in different guises. My view is that you only cook what you enjoy eating so while this isn’t a ‘classic’ in the most conventional sense of the word, it’s a classic for me simply because I love it.
