The best octopus to buy are the frozen ones from Portugal and freezing has the added advantage of being one of the best ways to tenderize the flesh without you having to pick up a hammer. Make sure you buy the octopus with double suckers; the ones with single suckers are very tough.

You could also make this salad by cutting the octopus into pieces; rolling it into the sausage shapes is something we do at the restaurant to make it more beautiful on the plate.
