John Dory is a very strange fish. It’s like a flat fish as it has a very thin body, but it swims vertically. Its English name comes from the French – jaune doré meaning ‘golden-yellow’, which describes the colour of the fish’s skin – but in other languages, including in French, it’s named after Saint Peter. Legend has it that the black spot on each side of a John Dory are ‘Saint Pierre’s’ thumbprints, left behind when he caught the fish with his fingers.
