Halibut are the largest flat fish in the world – there are records of some as large as 300kg (660lb), though they generally range from 3 to 70kg (6½ to 154lb). We were once sent one at Koffmann’s that weighed 47kg (103lb) without its head and our fish chef had to stand on her tiptoes to prepare it. We managed to get 300 portions from that fish!
