Salsify (oyster plant) is not an easy vegetable to find outside of France and though popular with chefs, it rarely makes its way into the kitchens of home cooks. That’s a shame as it has an interesting, compact texture and a flavour that is quite hard to describe; some liken it to oysters, others to artichokes and some to nutty parsnips.
