Salsify (oyster plant) is not an easy vegetable to find outside of France and though popular with chefs, it rarely makes its way into the kitchens of home cooks. That’s a shame as it has an interesting, compact texture and a flavour that is quite hard to describe; some liken it to oysters, others to artichokes and some to nutty parsnips.
My mum would often serve our Sunday roast chicken with salsify (oyster plant). She would boil it then toss it into the bird’s roasting pan for the
