THESE ROLLS ARE a perennial favourite of the Thais, who love to snack on them anytime of day. Serve with Cucumber Relish.

Method

Soak the noodles in warm water for at least 10 minutes, then drain and cut them into 2 cm (¾ in) lengths with scissors. In a mortar and pestle (or food processor) pound together the garlic, coriander root, peppercorns and salt until fine. In a wok heat the oil over a medium heat and fry the mixture until fragrant. Add the prawns and pork and fry until cooked, about 3 minutes. Add the noodles an
