THIS DISH AND the two following are usually eaten with a side plate of fresh vegetables. Cucumbers, green beans and cabbage make a pleasant combination, but any vegetables may be used as long as they offer an interesting contrast in taste and texture. Pork neck (blade) or some field mushrooms may also be used instead of the beef.

Ingredients

  • 200 g (7 oz) beef sirloin, marinated in a little fish sauce for a few hours</

Method

Grill or broil the beef to medium rare, about 3-5 minutes. Allow to rest for at least 5 minutes before slicing thinly. Combine the beef with the remaining ingredients, using 1 tablespoon of sticky rice. Check that the flavour is hot, sour and salty, and add more chillies, lime juice and/or fish sauce as necessary.

Serve sprinkled with the remaining 1 tablespoon of sticky rice.
