THIS IS A SOUTHERN version of a sour orange curry. Southern food is distinguished by its heat — instead of using dried long red chillies, the small ones are preferred. The use of kapi, usually unroasted in this recipe, gives a rich taste to the finished curry. If a vegetarian curry is required, substitute cauliflower, green beans, tomatoes or cucumbers for the fish, and light soy sauce for the fish sauce.
