BE CAREFUL WHEN filling the squid as it could explode if it is overfilled or steamed over too high a heat. As an interesting variation, the squid could be grilled, broiled or substituted for the fish in Trout with Caramel and Fish Sauce. Serve with a bowl of fish sauce mixed with chopped chillies, sliced red shallots and sliced lime.
