I FIRST HAD this dish at Hua Hin, a resort town three hours south of Bangkok. Here, on the pier, is one of the best seafood restaurants in Thailand. It is highly regarded not so much for the standard of the cooking — as everything is dealt with simply — but for the extraordinary freshness of the ingredients, which come to shore within sight of the restaurant.
